ORANGE & CARDAMOM CAKE

INGREDIENTS (CAKE)
- 250g salted butter, melted and cooled
- 2 eggs, beaten
- 2 tsp vanilla
- 2 oranges zested and juiced
- 1 cup greek yogurt
- 2 cups self raising flour
- 1 cup coconut sugar (or raw granulated)
- 1.5 tsp ground cardamom
INGREDIENTS (ICING)

125g cream cheese
- 1 cup icing sugar
- ½ tsp vanilla
- 2 tbsp orange juice
- Pistachios and dried flowers to decorate
METHOD
- Preheat oven to 160 C degrees
- Whisk together melted butter, eggs, vanilla, orange zest, 6 tbsp orange juice and yogurt
- In a separate bowl combine flour, sugar and cardamom
- Gently fold dry ingredients into wet ingredients
- Bake for 40 minutes or until a skewer inserted comes out clean
- Leave the cake to cool before adding icing
- Make icing by whisking together all icing ingredients until smooth and creamy
- Spread over cake and decorate as you please!
