ORANGE & CARDAMOM CAKE

Orange and Cardamom Cake Recipe

INGREDIENTS (CAKE)

  • 250g salted butter, melted and cooled
  • 2 eggs, beaten
  • 2 tsp vanilla
  • 2 oranges zested and juiced
  • 1 cup greek yogurt
  • 2 cups self raising flour
  • 1 cup coconut sugar (or raw granulated)
  • 1.5 tsp ground cardamom

INGREDIENTS (ICING)

  • 125g cream cheese

  • 1 cup icing sugar
  • ½ tsp vanilla
  • 2 tbsp orange juice
  • Pistachios and dried flowers to decorate

Orange and Cardamom Cake Recipe

METHOD

  1. Preheat oven to 160 C degrees
  2. Whisk together melted butter, eggs, vanilla, orange zest, 6 tbsp orange juice and yogurt
  3. In a separate bowl combine flour, sugar and cardamom
  4. Gently fold dry ingredients into wet ingredients
  5. Bake for 40 minutes or until a skewer inserted comes out clean
  6. Leave the cake to cool before adding icing
  7. Make icing by whisking together all icing ingredients until smooth and creamy
  8. Spread over cake and decorate as you please!
